Fairey Swordfish

Skilfully engineered by our master roasters, Swordfish is a traditional everyday coffee that has a distinct modern twist.

Made from three high-quality single-origin beans, our new artisan blend produces a zesty espresso that is characterised by its signature tangerine finish. However, when milk is added, other flavours come to the fore, creating a smooth and moreish coffee. It is the perfect coffee for all seasons and all drinks.

Swordfish contains two single-estate arabicas and a premium volcano-grown robusta. They are:

Badra Estate Mysore Arabica

Spread across the southern states of Karnataka, Kerala and Tamil Nadu are the plantations that belong to the famed Badra Estate, one of India’s premier coffee producing companies.

Colloquially known as Mysore, the Badra Estate coffee that we use in this blend comes from the numerous coffee farms near the vibrant city of Bangalore. Grown at altitude, this arabica Mysore arabica is well known for its smoothness and subtle flavours of praline and nut.

COSURCA Medellin Excelso Arabica

Founded in 1993, the Empresa Cooperativa del Sur del Cauca (COSURCA) has grown to become one of the largest, and best, farming cooperatives in Colombia. Strictly high grown in the mountainous plantations that popular the Cauca region, this Medellin Excelso arabica brings additional sweetness and a signature tangerine finish to the blend.

Java Semeru Robusta

Full bodied, velvety in taste and texture with a somewhat smoky aroma and intriguing taste profile, this is not your average robusta: Grown in the vicinity of Mount Semeru – the highest point in East Java – this Indonesian robusta not only adds depth and body to the Swordfish, but it also augments the blend’s praline finish.

Why Swordfish?

Our headquarters and coffee roasting facilities are located near to Sherburn Airfield, where the Blackburn Aircraft Company, under licence, built 1,699 Fairey Swordfish planes during World War II.

Instrumental in many major and well documented missions during the war, the Swordfish became a popular and iconic plane, one that was well-loved by pilots for its manoeuvrability and versatility in combat.  This Swordfish blend is our tribute to this great aircraft.

Tasting Notes

As an espresso, the main thing that you will notice is the blend's signature tangerine finish. This is thanks to the inclusion of the exceptionally fruity COSURCA arabica that delivers the palette friendly notes of orange and a pleasing zesty acidity.

However, if you take time to explore the flavours, you'll find that a distinct hint of nut and chocolate in there too.

When Swordfish is used to create milk-based specialities - lattes, flat whites and cappuccinos etc. - the creaminess of the milk tempers the tangerine finish and allows those chocolate and nut flavours to expand. The result is a pleasing yet subtle profile that is perfect for all seasons.

Brewing Info

Brewing temperature: 92-94°C

Brewing notes: Aim to keep espresso shots at around the 25 second mark to maximise the acidity and retain that zesty tangerine edge. However, you can enhance the nuttiness and chestnut notes though a slight over extraction.
