Description

Ube (pronounced ooh-beh) is a purple yam native to the Philippines and used widely in Filipino cuisine. Traditionally, it is cooked into ube halaya (ube jam) and used in Filipino desserts like halo-halo, pastries, and ice creams.

Now Ube is moving beyond food and into drinks – and that’s where it really starts to work for cafés.

Its striking purple color makes it highly recognizable and visually appealing.

It has a naturally sweet, smooth, and mildly nutty flavour with subtle notes often compared to vanilla or coconut. It’s not overpowering, which makes it ideal for building drinks that feel balanced rather than heavy.

Celebrated for its remarkable natural purple hue, it is also a source of fibre, carbohydrates and antioxidants, something health conscious customers are increasingly aware of when choosing drinks beyond coffee.

Ube works particularly well with:

  • Milk (both dairy and plant-based)
  • Vanilla

Iced drinks

Iced Ube lattes and layered drinks are where it really stands out. The purple colour creates a strong visual, especially when paired with milk or contrasting layers.

How to make

  1. Take 1 mini scoop (approx.1.5g) Zuma Ube Powder
  2. Sift through a sieve to remove clumps
  3. Add 30ml warm or cold water and whisk vigorously in a 'W' or motion
  4. Whisk until thick and creamy foam with bubbles forms
  5. Top with warm water (60-70°C) or steamed milk. Adjust to taste

Ube Latte

You'll need
  • Zuma Ube Powder
  • Milk (dairy or plant based)
Method
  1. Add Zuma Ube to a cup with a splash of hot water
  2. Stir or whisk until smooth
  3. Steam 250ml milk of choice and pour into the cup, stirring as you pour

Iced Ube Latte

You'll need
  • Zuma Ube Powder
  • Milk (dairy or plant based)
  • Ice
Method
  1. Just add a small amount of water to a scoop of Ube Powder
  2. Stir or whisk until smooth
  3. Add Ice
  4. Pour over your milk of choice

Ube Iced Chocolate

You'll need
  • Zuma Ube Powder
  • Zuma Dark Chocolate Sauce
  • Milk (dairy or plant based)
  • Ice
Method
  1. Add 2 pumps of Zuma Dark Chocolate Sauce to the bottom of a glass
  2. Fill the glass with ice and pour over milk
  3. In a separate cup, mix Zuma Ube with a splash of hot water until smooth. Gently pour the ube over the milk to create layers
  4. Stir before drinking
